Borlotti Beans in Tomato Sauce, a great side dish and soup
Borlotti beans, known as cranberry beans, are very similar to cannellini beans except they are streaked with red lines. They are widely used in Italian cooking because when they are cooked and turn light brown, they have a lovely smooth, creamy texture and sweetish flavor. It’s for this reason we have decided to write down a recipe about them.
Ingredients for about 5 people
2 Borlotti Beans tins
1 Peeled garlic
3 Ounces extra-virgin olive oil
1 Tomatoes tin
In a large pot heat the oil and add the garlic and the onion. When the garlic becomes opaque add the shelled beans and a pinch of salt. Cook until the mixture becomes soft and, then, add the can of tomatoes. Bring to a bowl and then decrease the heat to medium low. Add additional water if the mixture becomes too dry. Don’t stop to stir until sauce becomes thick.
Your beans soup is done! You can serve it with crudités or bruschetta.
